  • 2 ¼ cups all-purpose flour

  • 1 ½ cups sugar

  • 3 eggs

  • 1 ¼ cups evaporated milk (or ½ cup evap + ¾ cup water)

  • ½ cup + 2 tbsp canola or vegetable oil

  • 1–2 tbsp ube flavoring (e.g., Bakersfield Ube Flavorade)

  1. Prep the Dry Ingredients:
    In a bowl, whisk together flour, baking powder, and salt. Set aside.

  2. Combine Wet Ingredients:
    In a separate mixing bowl, beat the eggs, then add milk, oil, sugar, and ube flavoring. Mix until well combined.

  3. Mix the Batter:
    Gradually sift the dry ingredients into the wet mixture. Stir gently until the batter is smooth with no lumps. Do not overmix.

  4. Prepare the Molds:
    Line your cupcake pan with liners and fill each about ¾ full with the batter.

  5. Cooking Options:

    • Oven: Preheat to 150°C (300°F) and bake for 14–18 minutes.

    • Steamer: Steam for 12–15 minutes over medium heat.

  6. Check for Doneness:
