๐Ÿง Ingredients

Cupcake Base:

  • ½ box vanilla or funfetti cake mix

  • 1 large egg

  • ¼ cup vegetable oil

  • ¼ cup milk or water

  • 2 tbsp rainbow sprinkles

Buttercream Frosting:

  • ½ cup (1 stick) unsalted butter, softened

  • 1 ½ cups powdered sugar

  • 1–2 tbsp heavy cream or milk

  • ½ tsp vanilla extract

  • Pink food coloring (optional)

Vanilla Drip Glaze:

  • ¾ cup white chocolate chips or candy melts

  • 2–3 tbsp heavy cream (adjust for thickness)

Toppings:

  • Golden sandwich cookies (like Golden Oreos)

  • Extra rainbow sprinkles

  1. Make the Cupcakes:
    Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
    In a bowl, combine cake mix, egg, oil, and milk. Mix until smooth.
    Fold in rainbow sprinkles.
    Spoon batter ¾ full into each liner.
    Bake for 15–18 minutes or until a toothpick comes out clean.
    Let cool completely.

  2. Prepare the Buttercream:
    Beat softened butter until fluffy (2–3 min).
    Gradually add powdered sugar. Add cream and vanilla.
    Mix until smooth and creamy. Add pink food coloring if desired.
    Transfer to a piping bag with a star tip.

  3. Pipe the Frosting:
    Pipe tall swirls of frosting onto each cooled cupcake.

  4. Make the Drip Glaze:
    Heat white chocolate and cream in 10-second intervals until melted and smooth.
    Let cool slightly, then spoon or drizzle over frosting.

  5. Decorate:
    Top each cupcake with a golden cookie.
    Sprinkle with extra rainbow sprinkles for a festive finish!
