These soft, sweet muffins are the perfect mashup between your favorite cinnamon rolls and fluffy cupcakes — ideal for breakfast, brunch, or an anytime treat!


๐Ÿง Ingredients:

For the Muffin Dough:

  • 2 cups all-purpose flour

  • ¼ cup granulated sugar

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¾ cup buttermilk (or whole milk + 1 tsp vinegar)

  • ¼ cup unsalted butter, melted

  • 1 large egg

  • 1 tsp vanilla extract

For the Cinnamon Filling:

  • โ…“ cup brown sugar, packed

  • 1½ tsp ground cinnamon

  • 2 tbsp unsalted butter, melted

For the Glaze:

  • ½ cup powdered sugar

  • 1–2 tbsp milk

  • ½ tsp vanilla extract

1. Preheat & Prep:

  • Preheat oven to 375°F (190°C).

  • Line a 12-cup muffin tin with paper liners or grease with butter/spray.

2. Make the Muffin Batter:

  • In a large bowl, whisk together:
    flour, granulated sugar, baking powder, baking soda, and salt.

  • In a separate bowl, whisk together:
    buttermilk, melted butter, egg, and vanilla extract.

  • Pour the wet ingredients into the dry and stir gently until just combined.
    ๐Ÿ‘‰ Do not overmix to keep muffins soft.

3. Make the Cinnamon Filling:

  • In a small bowl, combine brown sugar and cinnamon.

  • Stir in melted butter until the mixture is sandy and crumbly.

4. Assemble the Muffins:

  • Spoon 1 tablespoon of batter into each muffin cup.

  • Add 1 heaping teaspoon of cinnamon filling.

  • Top with another tablespoon of batter.

  • Use a toothpick or knife to gently swirl the cinnamon filling into the batter.

5. Bake:

  • Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.

  • Tops should be puffed and lightly golden.

6. Make the Glaze:

  • Whisk together powdered sugar, milk, and vanilla until smooth and pourable.

  • Adjust consistency with more milk (thinner) or sugar (thicker).

7. Drizzle & Serve:

  • Let muffins cool for 10 minutes in the pan.

  • Drizzle glaze generously over the warm muffins.
