☕ Delicious Coffee Cream Cake

A light, fluffy sponge infused with coffee and topped with creamy coffee whipped frosting — perfect for coffee lovers!


🧁 Ingredients

For the Cake:

  • 4 large eggs

  • 150g granulated sugar

  • 150g all-purpose flour

  • 1 tsp baking powder

  • 2 tbsp instant coffee dissolved in 2 tbsp hot water

For the Coffee Cream:

  • 200ml cold whipping cream

  • 2 tbsp instant coffee

  • 2 tbsp sugar

Optional Decoration:

  • Coffee beans

  • Cocoa powder for dusting


👨‍🍳 Instructions

1️⃣ Make the Cake:

  1. Preheat your oven to 180°C (350°F). Grease and line a round cake pan.

  2. In a large bowl, beat the eggs and sugar until the mixture becomes pale, thick, and doubled in volume.

  3. Stir in the dissolved coffee until well combined.

  4. Sift in the flour and baking powder, folding gently to maintain the airiness.

  5. Pour the batter into the prepared pan and smooth the top.

  6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let the cake cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely.

2️⃣ Prepare the Coffee Cream:

  1. In a chilled bowl, beat the whipping cream, instant coffee, and sugar until stiff peaks form.

  2. Keep refrigerated until ready to use.

3️⃣ Assemble the Cake:

  1. Once the cake is fully cooled, carefully slice it horizontally into two layers.

  2. Spread half of the coffee cream over the bottom layer.

  3. Place the top layer over the cream, then spread the remaining cream over the top and sides of the cake.

4️⃣ Decorate & Chill:

  • Garnish with coffee beans and/or a dusting of cocoa powder for a beautiful finish.

  • Chill the assembled cake for at least 1 hour before serving to allow the flavors to meld and the cream to set.
