  • ½ cup (115 g) unsalted butter, softened

  • ½ cup (100 g) brown sugar

  • ¼ cup (50 g) granulated sugar

  • 1 tsp vanilla extract

  • 1 cup (125 g) all-purpose flour (heat-treated if necessary)

  • ½ cup (90 g) mini chocolate chips

For the Ganache & Decoration:

  • 1 cup (175 g) semi-sweet chocolate chips

  • ½ cup (120 ml) heavy cream

  • Red velvet cake crumbs and extra mini chocolate chips for garnish

1️⃣ Make the Cookie Base

  • Preheat oven to 350°F (175°C).

  • Grease a 9-inch springform pan.

  • In a bowl, combine crushed cookies and melted butter until well blended.

  • Press the mixture firmly into the base of the pan.

  • Bake for 8–10 minutes, then let cool completely.


2️⃣ Prepare the Red Velvet Cake Layer

  • In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and a pinch of salt.
