๐Ÿ“ Ingredients

For the Cake Layers

  • 2 ½ cups (310g) all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 cup (230g) unsalted butter, softened

  • 1 ½ cups (300g) brown sugar

  • 4 large eggs

  • 1 cup (240ml) Greek yogurt or sour cream

  • ½ cup (120ml) honey

  • 1 tsp vanilla extract

For the Filling & Frosting

  • 2 cups (480ml) heavy cream

  • 8 oz (225g) cream cheese, softened

  • ½ cup (120ml) honey

  • 1 tsp vanilla extract

For Decoration

  • Honey (for drizzling)

  • Fresh blackberries, grapes, and other berries

  • Walnuts & pecans (lightly toasted)

  • Rolled oats or granola (optional, for crunch)


๐Ÿฐ Instructions

Step 1: Make the Cake

  1. Preheat oven to 175°C (350°F). Grease and line three 8-inch cake pans.

  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. In another bowl, cream butter and brown sugar until fluffy. Add eggs one at a time, then mix in honey and vanilla.

  4. Add dry ingredients alternately with yogurt, mixing until just combined.

  5. Divide batter evenly into pans and bake 25–30 minutes, until a toothpick comes out clean. Let cool completely.

Step 2: Prepare Frosting

  1. Beat cream cheese until smooth.

  2. Add honey and vanilla, mixing until creamy.

  3. Whip heavy cream to stiff peaks and fold into cream cheese mixture. Chill until ready to use.

Step 3: Assemble

  1. Place one cake layer on a serving plate. Spread frosting evenly.

  2. Repeat with remaining layers.

  3. Frost the outside lightly in a “naked cake” style, leaving the sides partly visible.

Step 4: Decorate

  1. Drizzle honey generously over the top.

  2. Garnish with fresh berries, walnuts, pecans, and oats.

  3. Let the cake chill for 30 minutes before slicing so the honey sets slightly.
