🍓 Classic Baked Strawberry Glazed Cheesecake with Fresh Strawberries

This cheesecake is a dreamy combination of a buttery biscuit crust, creamy baked cheesecake filling, and a glossy strawberry glaze topped with fresh, juicy strawberries. Perfect for birthdays, celebrations, or a sweet weekend indulgence.


Ingredients

For the Crust:

  • 200 g (2 cups) graham crackers or digestive biscuits, finely crushed

  • 100 g (7 tbsp) unsalted butter, melted

  • 2 tbsp sugar (optional)

For the Creamy Cheesecake Filling:

  • 500 g (2 cups) cream cheese, softened

  • 200 ml (3/4 cup) heavy cream, chilled

  • 150 g (3/4 cup) granulated sugar

  • 2 tsp vanilla extract

  • 3 large eggs (room temperature)

  • 2 tbsp all-purpose flour

For the Fresh Strawberry Glaze:

  • 250 g (1 1/2 cups) fresh strawberries (plus extra for topping)

  • 2 tbsp sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch + 2 tbsp water (slurry)


Instructions

Step 1 – Make the Buttery Biscuit Crust

  1. Preheat oven to 170°C (340°F).

  2. Mix crushed biscuits with melted butter (and sugar if using).

  3. Press mixture into the base of an 8-inch (20 cm) springform pan.

  4. Bake for 10 minutes, then set aside to cool.


Step 2 – Prepare the Creamy Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth and fluffy.

  2. Add eggs one by one, mixing gently.

  3. Stir in vanilla and flour.

  4. Whip the heavy cream until soft peaks form, then fold into the batter for extra creaminess.

  5. Pour over the baked crust.

Bake in a water bath at 160°C (320°F) for 50–60 minutes until the edges are set but the center is slightly jiggly. Let cool, then refrigerate for at least 4 hours or overnight.


Step 3 – Make the Glossy Strawberry Glaze

  1. In a small saucepan, combine strawberries, sugar, and lemon juice. Cook on medium until juicy.

  2. Add cornstarch slurry, stir until the sauce thickens.

  3. Let glaze cool completely.


Step 4 – Assemble & Decorate

  1. Spread the cooled strawberry glaze over the chilled cheesecake.

  2. Arrange fresh whole strawberries neatly on top.

  3. Slice and serve cold.
