❤️ Heart-Shaped Strawberry Cream Cookies

Ingredients

For the Cookies (Shortbread style):

  • 1 cup (230g) unsalted butter, softened

  • 2/3 cup (130g) granulated sugar

  • 1 large egg yolk

  • 1 tsp vanilla extract

  • 2 cups (250g) all-purpose flour

  • 1/4 tsp salt

For the Filling:

  • 1 cup (240ml) heavy whipping cream, cold

  • 2 tbsp powdered sugar

  • 1/2 tsp vanilla extract

Decoration:

  • Fresh strawberries (whole, with leaves for a pretty look)

  • Powdered sugar (for dusting)


Instructions

1. Make the Cookie Dough

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy.

  2. Beat in the egg yolk and vanilla extract.

  3. Gradually add flour and salt, mixing until a smooth dough forms.

  4. Shape the dough into a disc, wrap it in plastic wrap, and chill for 30 minutes in the refrigerator.

2. Bake the Cookies

  1. Preheat oven to 350°F (175°C).

  2. Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness.

  3. Use a heart-shaped cookie cutter to cut out cookies.

  4. Place them on a lined baking tray and bake for 10–12 minutes, until lightly golden at the edges.

  5. Allow cookies to cool completely on a wire rack.

3. Prepare the Whipped Cream

  1. In a chilled mixing bowl, beat the heavy cream with powdered sugar and vanilla until stiff peaks form.

  2. Transfer whipped cream into a piping bag fitted with a star tip.

4. Assemble the Cookies

  1. Take one cookie and pipe a layer of whipped cream on top.

  2. Place another cookie gently over it, sandwiching the cream.

  3. Pipe a dollop of cream on top of the cookie sandwich.

  4. Place a whole fresh strawberry on top of the cream.

  5. Lightly dust the cookies with powdered sugar for a beautiful finish.

  • For extra flavor, you can add lemon zest into the cookie dough.

  • To keep strawberries fresh, assemble these cookies just before serving.

  • Store plain cookies in an airtight container for up to 5 days; assemble with cream and fruit the same day.
