
🍪 Chocolate Chip Cookie Cheesecake Recipe
Ingredients
Crust

250g (about 25) chocolate chip cookies

100g unsalted butter, melted
Cheesecake Filling
-
500g cream cheese (room temperature)
-
200ml heavy cream (cold)
-
150g granulated sugar
-
2 tsp vanilla extract
-
2 large eggs
-
2 tbsp flour
-
120g mini chocolate chips
-
6–8 chocolate chip cookies, broken into chunks
Chocolate Ganache Topping
-
200g dark chocolate, chopped
-
150ml heavy cream
Decoration (optional but recommended 😍)

Extra chocolate chip cookies (halved)
-
Chocolate chunks or squares
Instructions
Step 1 – Make the Crust

Crush the cookies into fine crumbs using a food processor or rolling pin.

Mix with melted butter until combined.

Press the mixture firmly into the bottom of a springform pan.

Chill in the refrigerator while preparing the filling.
Step 2 – Prepare the Cheesecake Filling

Beat the cream cheese and sugar together until smooth and creamy.

Add eggs one at a time, mixing well after each.
-
Mix in vanilla extract and flour.
-
Fold in mini chocolate chips and cookie chunks.

Pour the mixture over the prepared crust.
Step 3 – Bake

Preheat oven to 160°C (325°F).

Place the springform pan on a baking tray and bake for 50–60 minutes, until the edges are set but the center is slightly wobbly.

Turn off the oven, leave the door slightly open, and let the cheesecake cool inside for 1 hour to avoid cracks.

Refrigerate for at least 4 hours (or overnight).
Step 4 – Chocolate Ganache

Heat heavy cream until just boiling.

Pour over chopped dark chocolate and stir until smooth and glossy.

Let it cool slightly before spreading over the cheesecake.
Step 5 – Decorate & Serve

Place halved cookies and chocolate chunks on top.

Slice and enjoy!
