🍮 Caramel Cheesecake Bars

Ingredients

For the crust:

  • 2 cups graham cracker crumbs

  • ½ cup unsalted butter (melted)

  • 2 tbsp granulated sugar

For the cheesecake filling:

  • 16 oz (450 g) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

For the caramel topping:

  • 1 cup granulated sugar

  • 6 tbsp unsalted butter (room temperature)

  • ½ cup heavy cream (warm)

  • Pinch of salt (for salted caramel)


Instructions

Step 1: Prepare the crust

  1. Preheat oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper.

  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter.

  3. Press firmly into the bottom of the pan to form an even crust. Bake for 10 minutes, then set aside.

Step 2: Make the cheesecake filling

  1. Beat cream cheese until smooth. Add sugar and beat again.

  2. Mix in eggs one at a time, then add vanilla and sour cream.

  3. Pour the filling over the cooled crust.

  4. Bake for 35–40 minutes until edges are set but center is slightly jiggly.

  5. Cool to room temperature, then refrigerate for at least 3 hours (or overnight).

Step 3: Caramel topping

  1. In a saucepan, melt sugar over medium heat until it turns golden brown.

  2. Add butter and whisk until combined.

  3. Slowly pour in warm cream, whisking constantly. Add a pinch of salt if desired.

  4. Let cool slightly before drizzling over the cheesecake.

Step 4: Assemble

  1. Cut chilled cheesecake into squares.

  2. Drizzle generously with caramel sauce.

  3. Serve and enjoy!
