🍏 Green Apple & Blueberry Ice Cream Sundae

Ingredients

For the green apple ice cream:

  • 2 cups green apples (peeled, chopped)

  • ½ cup sugar (or honey for lighter version)

  • 1 tbsp lemon juice

  • 1 cup Greek yogurt (or heavy cream for richer texture)

  • 1 cup milk (dairy or almond milk)

  • A pinch of cinnamon (optional)

For toppings:

  • Fresh blueberries

  • Crushed graham crackers, granola, or oat crumble

  • A few anise stars (for garnish only, not to eat)

  • Fresh mint leaves (optional)


Instructions

  1. Prepare the apple purée

    • In a saucepan, cook chopped apples with sugar and lemon juice until soft (about 10 minutes).

    • Blend until smooth, then let it cool completely.

  2. Make the ice cream base

    • In a mixing bowl, combine apple purée with yogurt, milk, and cinnamon.

    • Chill mixture in the fridge for at least 2 hours.

  3. Churn or freeze

    • Pour into an ice cream maker and churn until creamy.

    • If you don’t have a machine, pour into a container, freeze, and stir every 30 minutes until set (about 3–4 hours).

  4. Assemble the sundae

    • Scoop green apple ice cream into a glass bowl.

    • Top with fresh blueberries and crumble.

    • Garnish with star anise and a butterfly decoration (if for presentation).


✨ This dessert is light, fruity, and has a nice balance between the tartness of green apples and the sweetness of blueberries.
