
Festive Chocolate & Coffee Layer Cake
Ingredients
For the cake layers (2 x 9-inch):

2 cups all-purpose flour

1 ½ cups sugar

¾ cup unsweetened cocoa powder

2 tsp baking powder
-
1 tsp baking soda
-
½ tsp salt
-
1 cup buttermilk
-
½ cup strong brewed coffee (cooled)
-
½ cup vegetable oil
-
3 large eggs
-
2 tsp vanilla extract
For the coffee buttercream:
-
1 cup unsalted butter (softened)
-
4 cups powdered sugar
-
3 tbsp instant espresso powder (dissolved in 1 tbsp hot water)
-
2–3 tbsp heavy cream
-
1 tsp vanilla extract
For decoration:
-
Chocolate pearls, bronze sprinkles, or edible glitter
-
Optional sparkler (for topping – remove before serving)
Instructions

Bake the cake layers
-
Preheat oven to 175°C (350°F). Grease and line two 9-inch cake pans.

In a bowl, whisk flour, cocoa, sugar, baking powder, baking soda, and salt.

Add buttermilk, coffee, oil, eggs, and vanilla. Beat until smooth.

Divide batter between pans, bake for 30–35 mins. Cool completely.

Make the buttercream

Beat butter until creamy. Gradually add powdered sugar.

Mix in espresso, vanilla, and cream until smooth and fluffy.

Assemble the cake

Place one cake layer on a stand, spread a thick layer of buttercream.

Top with second cake layer, cover the top with swirls of buttercream.

Decorate
-
Sprinkle chocolate pearls and edible glitter generously.

Add cupcakes or mini muffins around for a dessert spread.

Top with a sparkler for the festive effect (light just before serving).
