Festive Chocolate & Coffee Layer Cake

Ingredients

For the cake layers (2 x 9-inch):

  • 2 cups all-purpose flour

  • 1 ½ cups sugar

  • ¾ cup unsweetened cocoa powder

  • 2 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup buttermilk

  • ½ cup strong brewed coffee (cooled)

  • ½ cup vegetable oil

  • 3 large eggs

  • 2 tsp vanilla extract

For the coffee buttercream:

  • 1 cup unsalted butter (softened)

  • 4 cups powdered sugar

  • 3 tbsp instant espresso powder (dissolved in 1 tbsp hot water)

  • 2–3 tbsp heavy cream

  • 1 tsp vanilla extract

For decoration:

  • Chocolate pearls, bronze sprinkles, or edible glitter

  • Optional sparkler (for topping – remove before serving)


Instructions

  1. Bake the cake layers

    • Preheat oven to 175°C (350°F). Grease and line two 9-inch cake pans.

    • In a bowl, whisk flour, cocoa, sugar, baking powder, baking soda, and salt.

    • Add buttermilk, coffee, oil, eggs, and vanilla. Beat until smooth.

    • Divide batter between pans, bake for 30–35 mins. Cool completely.

  2. Make the buttercream

    • Beat butter until creamy. Gradually add powdered sugar.

    • Mix in espresso, vanilla, and cream until smooth and fluffy.

  3. Assemble the cake

    • Place one cake layer on a stand, spread a thick layer of buttercream.

    • Top with second cake layer, cover the top with swirls of buttercream.

  4. Decorate

    • Sprinkle chocolate pearls and edible glitter generously.

    • Add cupcakes or mini muffins around for a dessert spread.

    • Top with a sparkler for the festive effect (light just before serving).
